YOU WILL NEED
Ingredients
280g Smoked vortici pasta
2 large red onions, thinly sliced
1/2 cup walnuts, chopped
100g mascarpone cheese
2 tbsp butter
Salt and black pepper to taste
Optional: Arugula for garnish and for extra flavour, add blue cheese cubes
PREPARATION
Step 1
Sauté Red Onion: In a large skillet, heat the butter over medium heat. Add the thinly sliced red onion to the skillet and sauté for 8-10 minutes, or until the onions are caramelized and tender. Season with salt and black pepper to taste. Remove from the skillet and set aside.
Step 2
Cook pasta: Bring a large pot of salted water to a boil. Cook the Smoked Vortici pasta according to package instructions until al dente. Drain the pasta and transfer it to a large mixing bowl. Add the mascarpone cheese to the warm pasta and toss until the cheese is melted and the pasta is well coated. Add a splash of pasta cooking water if needed to create a creamy sauce.
Step 3
Combine ingredients: Once the pasta is coated with mascarpone, add the caramelized red onions and chopped walnuts to the bowl. Gently toss to combine, ensuring the onions and walnuts are evenly distributed throughout the pasta.
Step 4
Serve: Divide the pasta among serving plates. Optionally, garnish each plate with a handful of fresh arugula for added freshness and colour.
