Sourdough tagliatelle with Cherry Tomatoes

INGREDIENTS (4 servings)

280g Sourdough Tagliatelle
100g cherry tomatoes, [cut in half]
50g rocket
1 clove of garlic
Extra Virgin olive oil
Salt
Black pepper

Preparation

Step 1

In a frying pan, add a little oil and garlic. Fry over a low heat. Add the cherry tomatoes and fry them on a medium high heat. Cook for 5 minutes, season with salt and pepper and set aside.

Step 2

Cook Sourdough Tagliatelle according to cooking directions, reserving some cooking water. Drain the tagliatelle and add it to the pan. Toss the tagliatelle for about 1 minute, by adding the rocket and a generous drizzle of olive oil. Adjust the consistency with cooking water.

Step 3

Serve the tagliatelle, garnishing with more rocket and tomatoes.
