How it’s made

The Source

The durum wheat is harvested in Italy. We only use Italian durum wheat from organic farming.

The Technique

The dough is enhanced by natural leavening and stirred with a pinch of sourness.

The Process

Understanding that the magic of pasta lies in its diversity, a new twisted shape was developed to sit alongside their renowned Michelin standard Tagliatelles. The new short pasta has a unique shape and rough texture designed to hold sauce and provide a full sensory experience.

Each of the ancient techniques used to create Atavi Vortici needs... Time. Each natural process, carried out in Italy, requires time, patience and skill to be completed.
