Smoked Tagliatelle with Delica Pumpkin, Burrata & Crushed Figs

INGREDIENTS

Delica pumpkin sauce

50g Salted butter
100g White onion, peeled and sliced
400g Delica pumpkin, peeled, deseeded & roughly chopped 2cm (net weight)
Pinch Sugar
Pinch Salt
300g Milk
400g Water

Roasted delica pumpkin

200g Delica pumpkin peeled and chopped 2cm
2 tbsp Olive oil oil
Pinch Sugar
Pinch Salt 

Soaked golden raisins

50g Golden raisins
1 Jasmine teabag

PREPARATION

Delica Pumpkin Sauce

Instructions:

Step 1: Melt the butter in a pan and add the onions. Cover with a lid and sweat gently without colouring for 10 minutes.

Step 2: Add the pumpkin to the pan and cook for another 10 minutes.

Step 3: Season with salt and sugar, then add the milk and water. Bring to a boil.

Step 4: Simmer for 10 minutes, then blend the mixture until smooth.

Step 5: Pass the sauce through a sieve for an extra silky texture.

Roasted Delica Pumpkin

Instructions:

Step 1: Mix the pumpkin pieces with seasoning and a drizzle of oil (or follow specific seasoning indications).

Step 2: Roast in the oven at 180°C for about 20 minutes, until golden and tender.

Soaked Golden Raisins

Instructions:

Step 1: Prepare a cup of Jasmine tea.

Step 2: Pour the hot tea over the golden raisins.

Step 3: Leave to soak overnight, or for at least 1 hour before using.
