Smoked Tagliatelle with Sourdough Butter, Burrata, Aubergines, Coloured Tomatoes, Fresh Basil

INGREDIENTS

280g smoked tagliatelle
1 jar of sourdough butter
1 medium aubergine, diced
200g coloured tomatoes, halved or quartered
1 burrata ball
Fresh basil leaves
Olive oil for cooking
Salt and pepper to taste

PREPARATION

Instructions:

Step 1: Heat a drizzle of olive oil in a pan. Sauté the diced aubergines over medium heat until golden and tender. Season with salt and pepper.

Step 2: Add the cooked aubergines and coloured tomatoes, stirring gently to warm through.

Step 3: In the same pan, melt the sourdough butter over low heat.

Step 4: Cook the smoked tagliatelle in salted water according to the package directions. Reserve some pasta water before draining.

Step 5: Add the smoked tagliatelle to the pan and toss well to coat. Use the reserved pasta water as needed for a smooth consistency.

Step 6: Plate the pasta and top with torn burrata, fresh basil leaves, and additional tomatoes. Adjust the seasoning if needed and serve immediately.
